Serving AM’s bites, jus poured at the table by chef Alexandre Mazzia

The chef

Alexandre Mazzia

Chef of the AM restaurant in Marseille, three Michelin Guide stars since 2021. An instinctive cuisine, born between Africa and the Atlantic.

An instinctive cuisine

Cooking the way one tells a journey

His plates blend smoke, chilli, citrus and iodine, flavours born of an African childhood and summers spent on the Atlantic coast.

Self-taught in creation more than in technique, Alexandre Mazzia has built in Marseille a culinary language like no other.

“It is not the place where I chose to settle, but the one I belong to.”

Flight log

Four stopovers that made the chef

STOPOVER 01PNR

Pointe-Noire, childhood

In Congo, born at the Manguiers clinic, he spends 15 years on the Côte Sauvage. So many memories: the pirogues coming home, smoked fish, barbecues on the beach, sunsets carrying their scents, like spices and chilli. The “mamas” smoking fish over wood fires give birth to the colours of his first vocabulary.

STOPOVER 02EDM

Summers, taste

With his grandfather Michel, a fisherman on the Île de Ré, grilled fish, mouclade on the barbecue, selling at the markets and his role as a supplier to local restaurateurs open his eyes. Michel teaches him that being different is not a difference… but a strength!

STOPOVER 03BSK

Basketball, the team

Alongside his training, the pastry chef and cook, a former youth prospect and European cadet, plays on court up to National 1. The team becomes a way of life, with all the values that make it up: encouragement, discipline, empathy, fair play, team spirit, high standards. They shape the spirit of AM.

STOPOVER 04MRS

Marseille, the world city

In 2009, he turns his gaze to this city facing the sea. An unexpected discovery reveals to him that pleasure can go as far as the imagination. AM is born in 2014.
