The principle
A boarding pass
At AM there is no à la carte menu. You choose the length of the journey; the chef composes the itinerary. The destination remains a surprise: it changes with the market, the catch of the day and the season.
The bites follow one another, some served in the dining room by the chef himself, others finished in front of you, jus poured by the spoonful.
The flight
A succession of stopovers around smoke, spices and the sea, to the rhythm of the open kitchen.
Landing
Sweet treats and the last sweet touches, to return gently to Marseille.

How much is a lunch journey?
Wednesday and Thursday: Premier voyage €175, Allons plus loin €295, Grand Voyage €385. Friday and Saturday: Premier voyage €275, Allons plus loin €335, Grand Voyage €395. Price per passenger, drinks not included.
How much is a dinner journey?
Wednesday and Thursday: Premier voyage €295, Allons plus loin €395, Grand Voyage €435. Friday and Saturday: Premier voyage €395, Grand Voyage €435. Price per passenger, drinks not included.
What is the Premiers Pas menu?
A €135 short-haul flight, served at lunch from Wednesday to Friday, except on public holidays and French school holidays. It conveys the first colours of the chef’s childhood in Pointe-Noire, like an inner journey.
Which days and at what time can I board?
AM welcomes its passengers from Wednesday to Saturday: lunch from 12:00 to 13:00, dinner from 20:00 to 21:00.
Are drinks included?
No. Prices are per passenger, drinks not included; food and wine pairings are available as a supplement.
Can I mention an allergy or a special diet?
Yes: let us know when booking, and the chef will be delighted to adapt your flight to your wishes.
